We expect a lot out of our days, don’t we? We want energetic and productive days!
Having more energy is amazing, and I’m here to tell you that if you eat healthy breakfasts, it will make a big difference! And, if these weren’t so delicious, trust me, I wouldn’t be talking about them.
Here are some quick delicious, healthy breakfasts that are vegan. These will keep you on your game! And, they’re EASY!
Overnight Oats
These are so easy that you’ll say “where have overnight oats been my whole life?”
All you need are rolled oats, milk (almond, soy, coconut, or regular milk – your choice!), cinnamon, fruit, and delicious toppings to add in the morning.
You’ll also need a sealable container to make and store them in. That’s all! I’ve included my two favorite recipes below, but you can be creative and add your favorite fruits and toppings! This is a perfect healthy breakfast on the go.
These overnight oats are a treat in the morning! They’re easy to prepare and will give you a reason to pop out of bed. They’re one of my top favorite go-to healthy vegan breakfasts!
Banana Overnight Oats
What You’ll Need:
1/2 cup of rolled oats
1/2 cup of non-dairy milk
1 tablespoon chia seeds
1 tablespoon of maple syrup
1/2 banana, sliced
What To Do: Stir all ingredients together in a small jar and add the lid. Store in the fridge for at least 5 hours or overnight. Before eating, top them with your favorite nuts and a few more banana slices! And here you have another healthy plant-based breakfast.
Chocolate Overnight Oats
1/2 cup rolled oats
1/2 cup non-dairy milk
1 tablespoon chia seeds
1 tablespoon maple syrup
1 tablespoon of cocoa powder
What To Do: Stir all ingredients together in a small jar and add the lid. Store in the fridge for at least 5 hours or overnight. Before eating, top them with your favorite nuts and a few banana slices or some berries!
Protein Pancakes
What You’ll Need:
1 tablespoon baking powder
1/2 teaspoon of salt
1/4 cup of protein powder (I use vanilla)
1 cup of all-purpose flour
1 tablespoon of maple syrup
1 and 1/4 cups of water
What to Do: In a mixing bowl, mix together the baking powder, salt, protein powder, and flour. Next, add maple syrup and about 1/2 cup water.
Heat up your griddle or non-stick pan on a low temperature. Continue to stir while adding in the water, until it is a smooth consistency.
Keep it pretty thick for fluffy pancakes. Add more water if you prefer thinner pancakes! Spoon about 1/4 cup of the batter into the pan for each cake.
Once you see some bubbles and firm edges, you can give them a flip. (roughly 4 to 5 minutes, depending on how high you have the heat)
You’ll want to cook them for about 3 more minutes on the second side. Top them with bananas, blueberries, strawberries, or any other toppings you choose for a delicious healthy breakfast to kick off the day!

Smoothie Bowl
What You’ll Need:
1 1/2 cup frozen berries
1 frozen banana
3/4 cup soy, almond, or coconut milk
2 teaspoons of maple syrup (use less or more for your preferred sweetness)
What To Do: For this smoothie bowl recipe, add the frozen berries, banana, and half of the liquid to the blender and blend!
Stop and scrape down the sides as needed. (you’ll need to do this often)
Add more milk or water as needed for your preferred consistency. I like my smoothie bowls to be thick and creamy. Top with more banana slices, your fruit of choice, chia seeds, granola, or coconut flakes.
Sometimes, I even add a few little chocolate chips!
The beauty of this healthy breakfast smoothie bowl is you can add your favorite toppings and make it your very own! And, that’s it for another plant-based, easy breakfast that doesn’t take much time.

Avocado Toast
Avocado toast is one of my favorites!
I eat this plant-based meal all the time for breakfast, lunch, or anytime. It’s so simple to put together which is why I probably eat it so often.
When I’m hungry, I’m ready to eat, immediately!
This is another one of those recipes that can become whatever you want it to be by adding on ingredients that you like, the more you make it!
So, make it a personal favorite and add your favorites veggies and flavors!
This vegan recipe is the way I love to eat avocado toast, but if you decide to add an egg, fresh herbs, or additional greens, go for it. This is YOUR healthy avocado toast breakfast!
What You’ll Need:
Your favorite delicious bread, two slices
One ripe avocado
1/2 tomato, sliced
lemon or lime
1 tablespoon of hemp seeds
sea salt
red pepper flakes
What To Do: Toast the bread to your preferred darkness.
Slice the avocado in half and remove the pit. Make slices in it with a butter knife, and spoon each half onto each of your slices of toast. Spread the avocado mostly smooth.
Slice the tomato into 2 or 3 slices and place them on top of the avocado spread. Drizzle with a squeeze of lime or lemon juice. Add a dash of sea salt followed by a dash of red pepper flakes. (depending on your preferences for a kick!) And, that’s it! You have a delicious, tangy, creamy healthy breakfast.
You could also eat this anytime if you prefer it as a snack or dinner!
