When lunch comes together in 15 minutes, I’m a happy camper.
Even when healthy eating is a priority, it can easily slip away if you don’t have a lot of time!
This is one of those easy healthy lunch ideas that are full of flavor and won’t take you long to put together, at all!
The ingredients are tangy and crunchy and make a sandwich that you’ll crave and want to eat again and again.
It’s one of my favorites! And, it’s plant-based and vegan. Bonus.
Because when I’m hungry, I want to eat, not embark on a journey of preparing a big meal. It’s too late for that!
There are variations to this sandwich, so be sure to scroll to the end for ways to mix it up. There are so many ingredients to play with that have a tangy flavor and add to it!
You could also toss these ingredients into a big bowl and make it into a greek avocado veggie salad instead of a sandwich! There are lots of options with this one.
The tangy bursts of flavor in this healthy greek veggie sandwich come from the olives, pepperoncini peppers, and oregano.
The smooth avocado and hummus make it ultra-creamy. And the crunch from the cucumbers and red onion are delightful. All packed into a quick and easy peasy lunch!
HERE’S WHAT YOU’LL NEED FOR THE GREEK VEGGIE SANDWICH
Your favorite bread, or a pita
Spring Mix of greens
Avocado
Hummus
Cucumber
Tomato
Kalamata Olives
Red onion
Pepperoncini peppers
Artichokes
Alfalfa Sprouts
Oregano, salt + pepper
How to Make the greek veggie sandwich
Start by slicing open a ripe avocado! Spoon out half of the creamy green deliciousness into a small bowl and mash it up with a fork.
Layout two pieces of your favorite bread. On one side of the bread, spread the hummus. On the other side, spread the creamed avocado. Layer the spring mix on top of the avocado, followed by the roasted red pepper slices and cucumber slices.
Next add the artichokes, olives, pepperoncini peppers, and onion slices. Sprinkle with a dash of oregano, salt, and pepper. I like to add more spring mix before topping it with the hummus-spread bread, but you don’t need to. The flat greens help the insides of the sandwich all stay together! Add your second slice of bread to the top, and cut the veggie sandwich in half using a serrated knife.
A pita can also be used for this sandwich! I’ve used both and enjoy them equally. Pitas tend to be a little bit smaller than bread slices, so it all depends on your appetite. The preference will be up to you and you can experiment with the different options!
Variations to the Healthy Greek Veggie Sandwich
Combine all ingredients over a big bowl of fresh greens instead of in a sandwich. Mix the hummus in as a creamy dressing.
If you have a panini press, this is a delicious way to make a warm and toasty greek sandwich lunch!
Swap out either the hummus or avocado spread for pesto instead. Yum!
