As I get older, I hear more people say “at this stage of the game”, “not at my age”, or “it’s all downhill from here”.
When I turned 50, my goal was to be the healthiest I’ve ever been. I started a plant-based diet, learned how to cook healthier, and lost 8 pounds.
Goal accomplished!

My life journey has included seeking fun, adventure, travel, delicious food, love, compassion, and laughing as much as I can! Of course, I’ve had challenges along the way, and have had to crawl back to my true self every.single.time. Growing pains, struggles, and uncertainty have often been a part of my life. You can read more of my journey to a life of eating plants here.
Now, at 52, I’m thriving on a healthy, plant-based diet. I live a vibrant life and love the food I eat.
And, you know what? It all started with my plate.

In the last 5 years, I:
* adopted a plant-based lifestyle
* completed the Rouxbe Cooking School Plant-based coursE
* received my certification in Plant-based Nutrition from Cornell
I lost 8 pounds before my 50th birthday on a plant-based diet.
I set the goal of completing a half-ironman race to prove to myself that I could do it.
I completed two half-ironman races that Summer! I was so excited that I did another one the following Summer.
Today, I continue to run and workout 5 days a week.
My diet is still plant-based and I’m looking at more endurance events for 2022!
I run a successful business in the travel industry with a passion for entrepreneurship, adventure, and exploration.
I’m super goal-oriented, I work hard, and obsessed with having a growth mindset.
My lifelong goal is to live a long, healthy life.
I’m obsessed with helping others achieve their dreams, too.
And, be a plant-based foodie, like me!
I live in the mountains of Colorado with my husband and BFF, John. (who also loves healthy vegan food, travel, adventure, and fun!)
