This Chickpea salad is so easy to make! One of the great things about this salad is that it can last you a few days of lunches.
Spread it onto your favorite bread one day, and then scooped onto a bed of greens the next day. Sometimes, I double the recipe just to make it last longer because I just love it SO MUCH! This is one of my favorite healthy lunch ideas.
2. Southwestern Pasta Salad Vegan
Black beans, lime, and cherry tomatoes are an amazing combination for this hearty pasta salad! This salad works great as a make-ahead dish. Then, just keep it in a big Tupperware in the fridge. These are my favorite bowls and I use them every week for my salads!

I make this one all-the-time! It’s so easy and you can add in any of your favorite veggies that you have on-hand. Heidi, from Foodie Crush, mentions in the post to add sprouts in and that made it even fresher with more texture.
I LOVE this idea, as I’m crazy about sprouts. I also sprinkle it with some salt & pepper. Experiment with different vegetable-flavored wraps. My preference is wheat wraps but sometimes I’ll have spinach – it just depends on what I have on hand.

And, you’ll feel good about yourself for making such a healthy choice. I find that chopping the veggies beforehand and storing them in the fridge makes preparation a lot easier.
